    Erythritol is only about 70 percent as sweet as sugar, so it needs the extra volume plus a high-intensity sweetener to land where maltitol was. What changes is texture and finish: erythritol recrystallizes as things cool, so frostings turn faintly gritty and sugar-free chocolate goes from smooth to slightly sandy, and it leaves a distinct cool, minty sensation on the tongue. It also will not brown, so cookies stay pale and cakey. Blending it half and half with allulose fixes most of the grittiness.

    Sorbitol is only about 60 percent as sweet as sugar, so you need more of it and it still tastes flatter, which is why many candy makers pair it with a little monk fruit. It holds moisture even better than maltitol, so caramels and chews stay softer for longer. The honest downside is that sorbitol has a stronger laxative effect than maltitol gram for gram, so if you switched away from maltitol for digestive reasons this is not the swap you want.

    If maltitol was in a boiled-sugar recipe, isomalt is the only common polyol that behaves properly at candy temperatures without scorching or weeping. It is barely half as sweet as sugar, so the result tastes mild and mostly of whatever flavoring you add. It also stays clear rather than going amber, so you lose the caramel color entirely. Do not use it in cakes or batters, where it just makes things dense and faintly sweet.

    Plenty of people reach for maltitol only because a recipe called for it, not because they are avoiding sugar. Sugar is sweeter, so use slightly less by volume, and everything else about the recipe gets easier: it browns properly, it crisps, and there is no cooling note and no digestive risk. Obviously this puts the carbohydrates and calories back in, so it is not an option if you are eating keto or managing blood sugar.

What is Maltitol?

Maltitol is Maltitol is a sugar alcohol made from starch, sold as maltitol powder or maltitol syrup, that is roughly three-quarters to nine-tenths as sweet as table sugar and is the bulk sweetener inside most commercial sugar-free chocolate and candy.

Cooking tips

  • Maltitol is in most sugar-free products for bulk as much as for sweetness, so it fills the physical space sugar would occupy. Any swap has to fill that space too, which is why high-intensity sweeteners like stevia or sucralose alone will collapse the recipe.
  • Maltitol powder and maltitol syrup are not interchangeable. The syrup is roughly three-quarters solids and the rest water, so if a recipe wants 100g of syrup and you only have powder, use about 75g of powder and add 25g of water.
  • Maltitol browns and holds moisture almost like sugar, which is exactly what erythritol cannot do. If you swap in erythritol and your cookies come out pale and dry, that is the reason, not your oven.
  • In homemade sugar-free chocolate, maltitol is what keeps the texture smooth. If you replace it with erythritol, add an extra tablespoon of cocoa butter per cup of chocolate to disguise the graininess.
  • Maltitol has the highest blood sugar impact of the common sugar alcohols and is the polyol most often blamed for gas and cramping, so scaling a recipe up is a bad idea. If a candy recipe worked at one batch, do not assume three batches eaten in a day will.

Frequently asked questions

Can I just leave the maltitol out?

No, not in baking or candy. Maltitol is a bulk sweetener, meaning it takes up real volume and holds moisture, so removing it leaves a hole in the recipe and you get a dry, shrunken, crumbly result. If you want to cut the sweetness without changing structure, swap it for the same volume of allulose or erythritol and dial back the high-intensity sweetener instead. In a drink or a sauce, where nothing depends on bulk, you can simply use less or use a pinch of stevia.

Is maltitol keto friendly?

It is the least keto friendly of the common sugar alcohols. Maltitol is partly digested and does raise blood sugar and insulin for many people, unlike erythritol or allulose, which is why plenty of low-carb bakers deliberately replace it. If that is your reason for looking for a swap, choose allulose, erythritol or monk fruit rather than xylitol or sorbitol.

Why does maltitol upset my stomach?

Sugar alcohols are only partly absorbed in the small intestine, and whatever passes through ferments in the large intestine, which produces gas, bloating and a laxative effect. Maltitol is one of the worst offenders because it also draws water into the gut. Erythritol is absorbed and excreted largely intact and is usually the gentlest option, with allulose close behind.

Can I use erythritol instead of maltitol 1:1?

You can, but it will taste under-sweet, because erythritol is less sweet than maltitol. Use about 1 1/4 cups erythritol per cup of maltitol and add a pinch of pure monk fruit or stevia to close the gap. Also expect a cooling sensation and, in anything cooled or chilled, a slightly gritty texture as the erythritol recrystallizes.

What replaces maltitol syrup specifically?

Allulose syrup is the closest, since it stays liquid, does not crystallize and browns. Soluble fiber syrups made from tapioca or corn also work and behave much like maltitol syrup in bars and no-bake recipes. If carbs are not a concern, light corn syrup or golden syrup will do the same job of preventing crystallization and keeping things soft.
