Sugar-free maple-flavored syrup

Where it fails
It does not reduce, caramelize or set. In baking it adds liquid and sweetness but no browning, unless it is allulose-based.

Allulose syrup + maple extract

Allulose dissolves like sugar, stays liquid when cold and browns in the oven, which other sugar-free sweeteners do not. Maple extract supplies the flavor.

Simmer the allulose and water 3 minutes, stirring, take it off the heat and stir in the extract. For a thicker syrup, whisk in 1/8 tsp xanthan gum while it is hot. Bottled liquid allulose can be used cup for cup with the extract and no cooking.
Where it fails
It is less sweet than maple syrup, and it will not cook to a firm candy stage.

Allulose browns faster than sugar. Lower the oven 25°F when you bake with it.

Brown-style erythritol blend + water

Granulated blends of erythritol with monk fruit or stevia, sold as a cup-for-cup stand-in for brown sugar. In a batter they replace both the sweetness and the bulk of maple syrup.

Liquid stevia or monk fruit drops + maple extract

Sweetness and flavor with no volume. Useful only where the maple syrup was sweetening something that already had enough liquid.

Start with a few drops and ¼ tsp maple extract, taste, and add a drop at a time. For a full cup of maple syrup the starting point is about 1 tsp of drops; strength differs by brand, so follow the label.

Honey, agave or coconut nectar

Honey has about 17 grams of carbohydrate per tablespoon and agave about 16, both more than maple syrup at 13. Coconut nectar, date syrup and regular or lite pancake syrup are sugar syrups too.

Tips for substituting maple syrup

  1. For pouring, pick an allulose-based or fiber-based syrup, or make the allulose syrup above. Syrups made from erythritol crystallize in the fridge.
  2. Maple extract is what makes any of these taste of maple. Use ½ tsp per cup of syrup and add it off the heat, because the aroma boils away.
  3. In baking, only allulose browns. With other sweeteners, test with a toothpick at the time the recipe gives and do not wait for color.
  4. Keep homemade allulose syrup in a closed jar in the fridge. If it thickens, warm it for a few seconds before pouring.
  5. If a sweetener blend contains xylitol, keep it and anything made with it away from dogs. Xylitol is toxic to them even in small amounts.

How many carbs are in real maple syrup?

About 13 grams of carbohydrate per tablespoon, nearly all sugar, or about 53 grams per ¼ cup. That is why a small pour uses up most of a strict daily carb limit.

Can I bake with sugar-free maple syrup?

Yes, as a liquid sweetener, in the same amount as maple syrup. It will not brown or caramelize unless it is made with allulose, and syrups thickened with gums can make a crumb slightly gummy. For baking, allulose syrup or a granulated blend plus water gives a better texture.

Why did my homemade keto syrup crystallize?

It was probably made with erythritol. Erythritol dissolves in hot water and comes back out as crystals when the syrup cools. Allulose stays dissolved. Rewarming an erythritol syrup clears it for a short time only.

Is maple extract keto?

Maple extract is flavoring in alcohol or glycerin and is used by the half teaspoon, so it adds almost no carbohydrate. Check the label of imitation maple flavor for added sugar or corn syrup.

What about yacon syrup or lite pancake syrup?

Lite pancake syrup has roughly half the sugar of regular syrup, which is still a sugar syrup. Yacon syrup is lower in sugar than maple but not free of it. Read the label for carbohydrate per tablespoon and decide from the number.
