  1. One ¼ oz envelope of unflavored gelatin holds about 2 ½ teaspoons, a little less than the tablespoon one egg takes.
  2. Add the dissolved gelatin while it is still liquid. Once it cools it sets and will not mix in.
  3. For some lift, add ¼ tsp baking powder per egg replaced.
  4. Gelatin weakens if boiled and will not set with raw pineapple, kiwi or papaya.
