What is Calamari?

Cooking tips

  • The single most important rule for squid is time: tender under 2 minutes, or tender again after 30 to 45 minutes of braising, and rubbery everywhere in between. Any swap you choose should be cooked in one of those two windows, not the middle.
  • Frozen squid is often better than fresh for frying, because freezing helps break down the muscle. Thaw it in the fridge and dry it very thoroughly, since water is what makes coatings fall off and oil spit.
  • Calamari is nearly flavorless, so the seasoning is the dish. Salt the dredge, salt again the second it leaves the oil, and serve with lemon. Any substitute will taste more correct if you do those three things.
  • Semolina or fine cornmeal mixed into the flour gives the sandy, crunchy crust of restaurant calamari, and it works identically on shrimp, mushrooms or hearts of palm.
  • Fry in small batches at 375F. Crowding the pan drops the temperature and gives you pale, greasy pieces regardless of what you put in it.

Can I just leave the calamari out?

In a mixed seafood stew or a fritto misto, yes, if you increase the shrimp or fish, since calamari contributes texture more than flavor. In fried calamari itself the ingredient is the dish, so swap to shrimp, cuttlefish or mushrooms instead of omitting.

What is the best vegan substitute for calamari?
