  1. Smaller measures: ½ cup sugar = 6 tbsp honey; ¼ cup = 3 tbsp; 1 tbsp sugar = 2 ¼ tsp honey.
  2. Oil the measuring cup first and the honey slides out cleanly.
  3. In a recipe with no liquid to reduce, such as cookies, add 2 tbsp flour per cup of sugar replaced.
  4. Honey darkens fast. Tent the pan with foil for the last third of the bake if the top is brown before the middle is set.
  5. In drinks and dressings there is nothing to adjust: start with ¾ as much honey and taste.
