Plain tomato sauce or passata is the one you want.

Gazpacho gives a thicker, more textured drink with obvious cucumber, pepper and garlic notes, and its vinegar already covers the acid, so cut the lemon by half. It is a delicious drink but noticeably not a classic Bloody Mary. Use a plain tomato soup rather than a condensed cream of tomato, which will turn the drink pink, sweet and unpleasantly rich.

Because tinned tomatoes are usually unsalted, you will need more salt than the formula above, closer to 1/4 teaspoon per 4 ounces.

Bloody Mary Mix is Bloody Mary mix is a bottled tomato cocktail mix, sold under names such as Zing Zang and Mr and Mrs T, that combines tomato juice with salt, lemon or lime, Worcestershire sauce, horseradish, pepper and chilli heat so that only vodka needs adding.
Cooking tips
- Season the mix, then let it sit for at least ten minutes before you pour. Salt needs time to dissolve, Worcestershire needs time to spread, and horseradish releases its heat gradually. A Bloody Mary tasted immediately after stirring almost always seems underseasoned, and people overcorrect by dumping in more hot sauce.
- Roll the drink, do not shake it. Pour it back and forth between two glasses or between a shaker and a glass a few times. Shaking with ice aerates the tomato and turns the drink pale, foamy and frothy, which most people find unpleasant in a savoury drink.
- Heat and salt read differently when a drink is very cold, so build the mix at room temperature, taste it, then chill it and taste again. It will need slightly more salt and acid than seemed right when warm.
- Prepared horseradish and fresh grated horseradish behave differently. Prepared horseradish in vinegar brings acid as well as heat, so if you use fresh, add an extra squeeze of lemon. Wasabi paste is a workable stand-in at about a quarter of the volume, though it tastes greener and more medicinal.
- Pickle brine, olive brine or the liquid from pickled pepperoncini can replace both the salt and part of the acid in the formula. Start with 2 teaspoons per 4 ounces of tomato juice in place of the celery salt and lemon, and pull back on anything else salty.
